Banana Cupcakes


1. Weigh 2 eggs and note the weight
2. Measure butter, self raising flour and caster sugar with the same weight
3. Mix all the ingredients together with a small amount of vanilla extract
4. Mash up a ripe banana into a paste (don't worry about getting all of the lumps out)
5. Add to the cake mixture and mix
6. Pour into cupcake cases
7. Bake for 15/20 minutes on 180 degrees
