3 easy meals to reheat | University

If you're like me, I find myself on campus around dinner time quite often. Sometimes I'm still working, or I have meetings and rehearsals that start at 6. And buying dinner everyday on campus can get so expensive and no one has the student loan for that!

I have got really into bulk making meals that are easy to reheat (providing that your university has microwaves that you can use!) and make these all the time and stick them in the freezer to pull out the night before, stick in a tupperware and take to uni with me. I usually make them when I am making my meal for the night if I am in, and just freeze the rest.

1. Curry

The ultimate student food. I don't do anything fancy, just add some curry sauce to chicken, and to lower the cost of chicken, I usually add some veggies too. You can add anything to it, but I mainly add peppers, onions, spinach and sometimes some frozen veg. If I am eating on campus, I'll buy a packet of microwaveable rice and put it in my bag. Then once dinner comes around, I add the amount of rice to the tupperware, and just heat it up for a few minutes. Simple, healthy and cheap!

2. Lasagne 

Lasagne is so much easier to make than people think. So whilst I sometimes make my own sauces, buying ones is also fine. As I don't really eat red meat, I use quorn and all the veggies I can find - mushroom, carrots, courgettes, peppers and tomatoes. Then layer it up, so quorn/tomato, then pasta sheets, white sauce and then repeat until finished, finishing with a layer of pasta sheets, white sauce and then some cheese. Bake until the cheese has melted and it is bubbling at the sides. I find with this one, it is better to freeze in tupperware, you don't want your lasagne loosing its shape. I actually like heated up lasagne more than freshly made!

3. Spaghetti bolognase 

So if you don't want to go the whole hog with making a lasagne, just cook some regular pasta with your tomato sauce. Don't forget the cheese because let's be honest, it's the best part of the dish.
