Chicken and Spinach Quesadilla | Student Recipes

I have been trying to do more actual cooking rather than shoving frozen food in the oven, this week, and it is going okay. I figured it is the least I can do after spending all day revising. It is the best thing to reward yourself with a great meal.

I am also trying to eat a bit healthier this term - including drinking lots of water, and joining the gym next week.

I did a little pinteresting after buying some spinach this week (for £1 a bag which has lasted me for days!) and saw Quesadillas. Perfect. Now most recipes call for large amounts of ingredients, and frankly, I don't have time for that. So I adapted the recipe slightly to make them super quick and easy. Plus they have limited washing up, it can all be done in one frying pan. Perfect.

1 chicken breast - £1
2 tortilla wraps - 25p
3 Large handful of Spinach - 25p
Grated Cheese - 50p
Salsa - £1

1. Cut the chicken into very small pieces. This way they will fit in the Quesadillas and cook super quickly. 
2. Add oil to a large frying pan and cook the chicken. It should take about 5 minutes, but cut the biggest piece open to check. 
3. Transfer to a bowl and add more oil to the frying pan. 
4. Cook the spinach for 2-3 minutes, adding some salt and pepper to taste. 
5. Add this to the chicken in the bowl. 
To make the Quesadillas
6. Spread  salsa to half of each wrap
7. Add the spinach and chicken evenly onto the half covered in salsa. 
8. Grate cheese on top, making sure that it covers the chicken and the sides. 
9. Fold your tortilla in half. Repeat on the other wrap. 
10. Add oil to the frying pan and place the Quesadilla inside. The cheese should melt causing the wrap to stick together.
11. Flip when the tortilla is getting crispy and repeat on the other side. 

They are super tasty and quick. I find that 2 Quesadillas fills me up, but feel free to add a side if you feel like this wouldn't fill you up. 

The ingredients were also pretty cheap. I always use the left over salsa for nachos for a revision snack!
